you flash modify the BIOS version by lowering the BIOS?

I think It is a good starting point to see how Winflash protect Eeprom Chip doing
a reverse engineering Code disassemble and comparing on both tools 2.51 and 2.54 !
I will give a look too !

There is a setting that can enable or disable bios write protection thingy in the hidden settings.
so probably newer bios has that switch on by default

i've heard it's possible to modify bios settings in linux thru /sys/firmware/efi/efivars(?) and/or efi shell if the bios allows it.

Yes !!!
On many Bios's Manufacturers there is this option Bios Lock and It can be used to Lock Eeprom
so generate Eeprom Write Protect or just to lock the Downgrade or Bios Reflash !
So It is to check in every case as can get a meaning different !
If You could make some tests We will be grateful as We have not yet tested (only on few pc)
This option is an Intel feature and is present into AMI - Phoenix and Insyde Bioses.
You can use Falseclock Method (is the evolving of Linux Method You talked about !) to
unlock NVRAM variables changing theirs values !
I have tried on many Bioses this technique, but not Always is working and You be aware to
touch only the right Variables as You can risk about a Brick !
